Hello Pumpkin Pie Spice Granola

Hello Monday, Hello pumpkin granola!!

This is a little different Hello Monday than the last few.  I can't say we've done much this week, other than a little Thanksgiving goodness at Jerry's office!

The excitement of the week?  Pumpkin Granola!  Really exciting, right?

Have you ever made your own granola?  I highly recommend trying it, if you haven't!  It is so much tastier than from the box and very easy.  Plus, you can play around with a base recipe and perfect it to your liking.

I wanted to use up some pumpkin I had and decided on granola.  I had no intention of changing the recipe, but I did make quite a few tweaks.  What I love about this recipe is that it not only has the pumpkin pie spice, but actual pumpkin in it!  I wanted to share, in case anyone was interested.

5 cups rolled oats
1 cup crushed pecans (or any nut you like)

1/2 cup honey (or maple syrup)

4 Tablespoons pumpkin puree

4 Tablespoons coconut oil (any oil will work)

2 Tablespoon *pumpkin pie spice

1/2 teaspoon salt

*You can easily make your own pumpkin pie spice by mixing 1 Tablespoon cinnamon, 1 teaspoon nutmeg, 1 teaspoon ginger and 3/4 teaspoon allspice

Preheat oven to 350 (176 C).  In a large bowl mix together the oats, pecans, pumpkin pie spice and salt.  In a microwaveable bowl, melt the honey and oil and add the pumpkin.  Pour the liquid over the oat mixture.  Spread over a cookie sheet and bake for 25 minutes, stirring halfway through.  If you like a crunchier granola, bake for an additional 15-20 minutes.  You can add dried fruit or chocolate chips to make your preferred granola.

There you have it, pumpkin pie spice granola!

Do you like making granola?  If so, what's your favorite recipe?

And what are you saying hello to this week?  Happy Monday!

Belem

Belem, Lisbon, Portugal, travel,

A jewel in Lisbon's crown!  It's easy to see why!

Belem Tower, meaning Bethlehem, has guarded Lisbon's harbor since 1520.

A UNESCO World Heritage Site due to it's significance in the Age of Discoveries.

The last thing explorers laid their eyes on as they journeyed across the Atlantic and the first thing that came into view upon their return.

Once inside, there are all sorts of nooks to explore.

Only €6, it's worth every penny!

After touring the Belem Tower, we made our way to Pasteis de Belem near the Jeronimos Monastery for a pasteis de nata, custard tart.

Creamy custard is baked in a tart shell and served warm with a sprinkling of powdered sugar!!  Yum!  Take me back now, these were heavenly!!

A tip we learned....don't be fooled by the long line snaking outside the front door.  That's for take away.  Capture the full experience by making your way inside (don't let the small store front fool you either, there are several rooms in the back), rest your weary feet and order yourself some tarts and coffee.  Aww, bliss!!  You will leave wanting more!!

On our way to locate these amazing custard tarts, we couldn't resist the area around the monastery.

We decided not to tour inside, but we had a little peek.

All located within the parish of Belem in Lisbon.  Makes for a great day of sightseeing.

If you find you're here during lunch time, we highly recommend Restaurante Os Jeronimos just down from the bakery.

Authentic Portuguese food and atmosphere.  The waiters are hilarious with lots of fun banter and shouting amongst themselves with some of the most amazing food we've ever had!

Have you toured Belem or tried the famous Belem pastries??

Linking up again with BonnieCamilaJessi, and Amy for Travel Tuesday.

Portugal's Exotic Food

 Gooseneck Barnacles

I had no idea you could eat these things!!  It was SO funny when this plate arrived at our table.  We had to ask what it was.  We then had to look up online how to eat it!  Ha!  Here is a great tutorial if you should ever need it.

I then started researching and found that it is quite dangerous to harvest them.  They grow at the base of jagged cliffs where the waves are the roughest.  The dangers of collecting the barnacles combined with the fact that it's not been possible to mimic the atmosphere of where these barnacles live make this a pricey delicacy.   This article explains how these guys risk their lives and sometimes lose them.  They can earn €1000 (that's almost $1300) in a day!

We lucked out and got our plate of barnacles as part of an array of appetizers.

Were they good, you might wonder?  They weren't too bad!  I like seafood and I'm willing to try new things (within reason).  I kept reaching for more as did Jerry.  I can't say I'd be paying big money for them, but I'm so glad we had a fun cultural experience of eating barnacles and learning something new.

Have you tried barnacles?  What's the weirdest food you've tried?

Fanny's Farm Shop, Surrey

Farm Shops are something I have come to love in this country.  Not all are created equal, of course, however I would stop at every one I see if I could.  Usually a shop, cafe and sometimes an array of other things.  Depending on the time of year, there might also be activities going on.
A friend recently set up a get together at a farm shop near Reigate in Surrey.

From the time I drove up to Fanny's Farm Shop I was taken in by all the colors, the cute signs and England flag bunting everywhere!

Eccentric bay would have been the most appropriate for me, but it was taken.  I'm not yet to the Gassy Grandma stage, so I chose the Dizzy Blond parking bay (hee hee)!

There was so much to take in!

If you're lucky you might be welcomed by this little guy.

These little ones too, maybe!

Don't forget to visit Burt & Ernie!

So much to see!

I had to walk through a few times to catch everything!

Don't forget about the loo.

Open only 2 times or year?

We had The Pudding Room booked for our tea time.

After our cream tea we had a wander through the shop.

Do you enjoy farm shops?

I think I'll make a point to find some more!

Come for a visit and I'll take you to Franny's Farm!
